DO NOT GIVE YOUR RAT PEANUT BUTTER. DO NOT DO THIS. It is bad. It will screw up their kidneys! Same with citrus!

Do not give fresh veggies everyday unless you enjoy scrubbing runny ratty poo from the cage, lol!

I would suggest an All Natural dog food, actually, along with the other food.
References :
Owner of rats for 10 years

maybe try switching her off that food onto nutro natural choice lite for overweight and less active dogs. I use that with all my rats and they maintain a healthy weight.
References :
She should be giving her the lab blocks, or just the "Extrusion" peanut-shaped things you can find in any petstore. Fruit and veggies and nuts are good, and my rats love a bit of hardboiled egg yolk. The seed mixes aren't good because they will pick out the bits that taste good and leave all the rest.
References :
Don't give her peanut butter in more than miniscule quantities- My Emma rat had a bite of PB one time and almost choked. Luckily she was okay, but now I try to avoid really sticky foods.

One of my rats is much bigger than the other, it may just be that she's evening out to her adult size. Just keep an eye on her, and small pieces of chicken, beef, even some really healthy dry/wet dog food will supply lots of protein.

My Emma + Claire especially love the bulk walnuts, almonds, ect. in the shell because it gives them something to chew on.
References :
As long as she is still eating, her coat is still shiny, she's not losing her hair and her general disposition hasn't changed, I would say she is doing just fine.

Keep an eye on her, check her back and see if her bones are sticking out more prominently than before, as long as you can't feel her ribs and shoulderblades too too much, she should be ok.

If you are still worried with her condition, phone up your local vet and see if they have any ideas.

Good luck. :)
References :
Proud rat owner.
